The Chew: Balsamic Salmon & Kale Sheet Pan Dinner Recipe
Ingredients[edit]
- 1 tbsp soy sauce
- 2 scallions – sliced
- 4 fillets salmon – skin-on
- 2 pints cherry tomatoes
- 1 tsp chili flakes
- 1/4 C balsamic vinegar
- 6 tbsp olive oil
- 2 tbsp maple syrup
- 2 bunches kale – stems removed, leaves chopped into 2-inch pieces
- 1 tbsp sesame seeds
- kosher salt and freshly ground black pepper
Directions[edit]
- Preheat the oven to 350 degrees
- Line 2 baking sheets with aluminum foil
For the Balsamic Vinaigrette:
- In a large bowl, add the olive oil, soy sauce, balsamic vinegar, scallions, salt and pepper, and maple syrup
- Whisk until combined, then divide the marinade in half
For the Salmon & Kale:
- Put the salmon fillets on one baking sheet and brush with some of the balsamic vinaigrette
- Season with salt and pepper, then top the fillets with a dash of sesame seeds and chili flakes
- In a large bowl, add the cherry tomatoes and kale, then toss with the balsamic marinade to coat
- Put the kale and tomatoes on the other baking sheet and put in the oven
- Cook for 12-15 minutes until the salmon is cooked through
- Remove from the oven and serve
