The Chew: Balsamic Salmon & Kale Sheet Pan Dinner Recipe

Ingredients[edit]

  • 1 tbsp soy sauce
  • 2 scallions – sliced
  • 4 fillets salmon – skin-on
  • 2 pints cherry tomatoes
  • 1 tsp chili flakes
  • 1/4 C balsamic vinegar
  • 6 tbsp olive oil
  • 2 tbsp maple syrup
  • 2 bunches kale – stems removed, leaves chopped into 2-inch pieces
  • 1 tbsp sesame seeds
  • kosher salt and freshly ground black pepper

Directions[edit]

  1. Preheat the oven to 350 degrees
  2. Line 2 baking sheets with aluminum foil

For the Balsamic Vinaigrette:

  1. In a large bowl, add the olive oil, soy sauce, balsamic vinegar, scallions, salt and pepper, and maple syrup
  2. Whisk until combined, then divide the marinade in half

For the Salmon & Kale:

  1. Put the salmon fillets on one baking sheet and brush with some of the balsamic vinaigrette
  2. Season with salt and pepper, then top the fillets with a dash of sesame seeds and chili flakes
  3. In a large bowl, add the cherry tomatoes and kale, then toss with the balsamic marinade to coat
  4. Put the kale and tomatoes on the other baking sheet and put in the oven
  5. Cook for 12-15 minutes until the salmon is cooked through
  6. Remove from the oven and serve
