Salmon Pear Sandwich with Sweet Pea Avocado Spread

Ingredients[edit]

  • 4, 3-4oz salmon filets
  • 8 pieces favorite bread
  • 1 ripe pear
  • 1 cup arugula
  • 1/2 cup grated parmesan
  • 1 cup sweet peas, boiled in water for 3 minutes & drained
  • 1/2 large avocado
  • 1 clove garlic
  • 1/4 teaspoon salt/pepper
  • 1/2 cup olive oil, divided
  • 2 lemons, juiced (divided)
  • 2 tablespoons dijon mustard

Directions[edit]

  1. First, marinate your salmon. In a shallow bowl, place salmon filets and top with 2 tablespoon olive oil, juice from one lemon and a sprinkle of salt/pepper. Cover and allow to marinate for 20 minutes.
  2. Meanwhile, make your sweet pea-avocado spread. In the bowl of a food processor, combine boiled sweet peas, avocado, 1/4 cup olive oil, juice from remaining lemon, garlic clove and salt/pepper.
  3. Heat a skillet with 2 tablespoons olive oil over medium heat. Add in salmon and cook on all sides until cooked through.
  4. Assemble sandwich by topping one piece of bread with sweet pea-avocado spread, pear slices, parmesan, salmon, arugula, dijon mustard and the other bread slice.
  5. You will have leftover sweet pea-avocado spread for snacking.
