First, marinate your salmon. In a shallow bowl, place salmon filets and top with 2 tablespoon olive oil, juice from one lemon and a sprinkle of salt/pepper. Cover and allow to marinate for 20 minutes.
Meanwhile, make your sweet pea-avocado spread. In the bowl of a food processor, combine boiled sweet peas, avocado, 1/4 cup olive oil, juice from remaining lemon, garlic clove and salt/pepper.
Heat a skillet with 2 tablespoons olive oil over medium heat. Add in salmon and cook on all sides until cooked through.
Assemble sandwich by topping one piece of bread with sweet pea-avocado spread, pear slices, parmesan, salmon, arugula, dijon mustard and the other bread slice.
You will have leftover sweet pea-avocado spread for snacking.
